Bühler, a leading technology company, has recently unveiled its state-of-the-art Puffing Application Centre in Uzwil, Switzerland, catering to the increasing demand for plant-based snacks, breakfast cereals, and bakery products with improved nutritional value and cost efficiency.
The newly established centre focuses on the hydrothermal process, utilizing controlled heat and pressure to expand raw materials, resulting in lighter and crispier end products compared to traditional methods. This innovative approach enhances digestibility by breaking down starches and extends shelf life by reducing moisture content.
Manufacturers can leverage this cutting-edge technology across various sectors such as snacks, breakfast cereals, confectionery, bakery goods, dairy products, and even pet food. Bühler’s Cerex systems offer flexibility with three production scale options to accommodate different operational needs.
The integration of the Puffing Application Centre with Bühler’s existing facilities like Grain Innovation, Flavour Creation, and Protein Application streamlines the product development process, allowing seamless transition from raw materials to final products without external collaborations.
Performance metrics of the Cerex technology demonstrate exceptional processing yields exceeding 95% for a range of grains and pulses, including quinoa and chickpeas. Notably, the energy consumption is significantly lower compared to similar systems, aligning with the industry’s focus on sustainable practices.
Christoph Vogel, Bühler’s head of Human Nutrition, highlighted the centre’s role in meeting the escalating demand for nutritious and crispy-textured products in both the food and feed sectors. Carol Krech, head of cereals and snacks, emphasized that the facility eliminates the need for manufacturers to invest in separate R&D infrastructure for puffing applications.
This significant development follows Bühler’s recent initiatives, such as the launch of the Milling Academy for enhanced training in food and feed processing. Additionally, the company introduced innovative solutions like OptiBake technology for wafer production and OmniCool Smart solution for chocolate and snack bar cooling, showcasing its commitment to advancing the food industry.
